Proceso de destilación de Jameson
Jameson ahora se fabrica en una nueva destilería en Middleton, Co. Cork. Hay tres elementos clave en cada botella de Jameson; Cebada, Agua y Maíz. Toda el agua para Jameson se suministra localmente desde The River Dungourney que fluye a través de la destilería. Jameson es uno de los pocos destiladores que quedan en el mundo que utiliza cebada malteada y no malteada en su whisky de los suministros que obtienen a menos de 100 millas de la destilería de Middleton. A Jameson le gusta mantener su whisky tan casero como sea posible, pero el maíz es un cultivo que necesita luz solar, algo de lo que no tenemos mucho en Irlanda, por lo que Jameson importa esto del sur de Francia.
Cuando todos estos ingredientes se mezclan, se destilan tres veces. La mayoría de los whiskys solo tienen doble destilación, pero Jameson descubrió que la triple destilación hacía que el whisky fuera mucho más suave. Muchos otros whiskies, principalmente los de Escocia, solo destilan dos veces, pero Jameson siente que el tiempo extra dedicado a la triple destilación es lo que lo hace tan especial. El whisky luego se madura en barricas de roble importadas de América o España que se utilizaron previamente para licores como el bourbon o el vino fortificado durante tres años. ¿Por qué tres años? Por ley, para que un espíritu se considere irlandés tiene que haber pasado tres años madurando en Irlanda. De ahí el título, Jameson Irish Whiskey. El 2% del Jameson Irish Whiskey se pierde por evaporación cada año mientras está en sus barriles, eso es mucho whisky desde que comenzaron en 1780.
Jameson hace todo lo posible para garantizar que las influencias externas se mantengan al mínimo. Jameson ejecuta una única destilería con control total sobre el proceso de producción. Cuando llega el momento de la mezcla, solo usan whiskies que fueron criados en los terrenos de nuestra destilería. Lo que se reduce a eso es que no tienen que tocar ninguna otra puerta de la destilería. Jameson nunca ha olvidado aquellos importantes para el proceso de destilación y su historia. La presencia de dos barriletes en relieve en nuestra botella verde es un humilde asentimiento para ellos, y sirve como un recordatorio de que Jameson es un whisky para personas trabajadoras, hecho por personas trabajadoras.
